1 large onion chopped
1 large 96oz can of chicken broth
1 lb potatoes (cut into approx 1 " pieces)
3 bunches or watercress (or substitute 2 10oz boxes of frozen brussel sprouts thawed and halved)
in a large pot....simmer the onion in approx 1/4 cup of the chicken broth until the onion is tender and most of the liquid has evaporated then add the potatoes and the remaing chickcn broth...bring to a boil, cover let simmer for approx 15-20 min...then stir in the water cress....(brussel sprouts) cook until wilted (approx 5 min) remove the soup from the heat and let cool slightly....
in batches put the soup into a blender and puree soup till smooth...put back into pot..add salt and pepper (red pepper was nice)
makes approx 9 cups...each 1 cup =
4g protien, 0 g fat, 0 mg chol, 20 g carbs , 3g fiber, 3g sugar
This is very easy, tastes good and filling....the watercress is supposed to aid in increasing your metabolism, and help to reduce water retention....
I'd suggest you be near a bathroom....*wink* You WILL get rid of excess water asap!
