Use cartoned eggwhites from www.eggnation.com I use a half litre (about 15 eggwhites) with 50g oatmeal, 1 tomato (chopped small), tiny pinch of sea salt and some cracked black pepper, whisk (never blend!) and fry with a few sprays of cooking spray. Add some Schwartz Season All to taste (a pinch).

Here a some links to a few others, either use whole eggs or pour the eggwhites in.

I chop up a small-medium whole onion (about tennis ball size). Put canola oil in skillet and throw in the onion for about 2-3 minutes on low heat and then add 7 scrambled up egg whites and one whole egg (to raise the overall amino profile), add about 8 oz organic black bean and corn salsa and stir it all together. Sort of like Mexican "egg fu yung." This afternoon I had worked up an appetite and added about 8 oz pre-cooked crumbled up Angus ground beef, and stirred it in. Delicious meal and stays with you for about 6 hours. I vary the ingredients, but my biggest temptation is to smother that dog with sharp cheddar,,,,but I resist...most of the time. :D

Recipes look interesting. Like mrhtbd, I'm always looking for new egg recipes. When you subtract the yolk and cheese, you need to spice it up in other ways. I thought about using those pre-packaged egg whites, but when you can buy a dozen large eggs at just over a dollar, I chose to take the time and crack those babies. ;)

2 chicken breasts, diced
1 vine ripened tomato, diced
2 large eggs, whisked
2 oz low fat mozarella, sliced

brown chicken in low fat spray, in a frying pan, throw in tomato once chicken is browned, add eggs and make sure mixture is evenly covering pan, place cheese loosely on top, lower heat not to burn mix, when cheese melts, eggs are ready.

make a bunch of quiche and freeze it, then just heat it up when it's time to eat.
