How to cook some damn good ribs

My father's recipe. That man knows how to cook some ribs. Thought someone out there might want to try this.


First thing is get Hickory chips (any hardware store) and take a couple of hands full and soak in water for about an hour.

Prepare the ribs (I use a rub not sauce - if you like sauce, then add about one hour before taking off the grill).

Pile the charcoal in one tight "ball" or "lump" at one part of the grill - do NOT spread out. Light coals. Once they are going, then drain the wood chips and put on the coals which will smoke the place up - which is what you cook with.

Place the ribs opposite the coals and as far away as possible.

There is temperature control openings at the bottom of the grill and in the lid. (I tend to keep the bottom on open full) Place the lid on over the grill, with the opening directly over the ribs.

Open slightly and regulate the openings for the heat. You want LOW heat, just enough to keep the coals hot. This will draw the smoke from the coals over and through the ribs locations. It is the smoke which cooks the ribs. They will be done in 6
