Don't know if this recipe has been posted yet but these are pretty fucking good. Have been making them a few times a week now.
Sweet Potato Protein Pancakes
- 2 scoops Beverly UMP Vanilla Protein Powder
-1 sweet potato (pre cooked, I always cook plenty once a week and store)
-1 whole egg plus 2 whites
-2 tbsp ground flax
-pinch cinnamon
-pinch baking soda
-pinch salt
-dash vanilla
-liquid stevia to taste
Spray pan with coconut oil spray and cook like regular pancakes on light/medium heat. Walden farms syrup is good to top them, although you can eat them by themselves too and they are still bomb.
1 serving would be around: 260 cal, 8g fat, 30g protein, 25g carb
Pretty sure I calculated that correctly.
